Lomo Saltado
(LOH-MOH SALT-A-DOE)
Ingredients
600gr beef (loin or steak)
1 red onion
2 tomatoes
1 red pepper
1 yellow pepper
2 teaspoons soy sauce
Cilantro

1 cup of beef broth
400g french fries
Ingredients for the garnish
1 cup of quinoa
Instructions
Step 1
Cut the meat into julienne strips and then into skewed pieces.
Step 2
Chop the onion, pepper (make sure to remove the seeds) and the tomato.
Step 3
Peel and cut the potatoes like French fries.
Step 4
Fry the potatoes in a pan with hot oil and fry the meat in another pan.
Step 5
Add the chopped vegetables to the meat, soy sauce, and meat broth.
Step 6
When the potatoes are golden, remove them from the pan and drain them on paper towel.
Step 7
Add the potatoes to the meat, add salt and pepper to taste, and cook for 10 minutes, stirring occasionally.
